Sticky rice is also high in dextrin and maltose. There are different varieties of sticky rice\u2014from long-grain to short-grain and white to purple. It is widely consumed across Asia.<\/p>\n\n\n\n<p>It is called glutinous (Latin:\u00a0<em>gl\u016btin\u014dsus<\/em>) in the sense of being glue-like or sticky, and not in the sense of containing\u00a0gluten\u00a0(which it does not). While often called\u00a0<em>sticky rice<\/em>, it differs from non-glutinous strains of\u00a0japonica rice\u00a0which also become sticky to some degree when cooked.
